If you use pre-made pie crusts,
baking an apple pie is simple!
Ingredients (8 servings)
2 pre-made frozen pie crusts (8 inch x 8 inch / 21 cm x 21 cm)
3 apples
1 lemon
1/2 cup (120g) Lakanto® (approx. 2 tablespoons / 30g per apple)
small amount of butter, flour, egg yolk
Instructions
Thaw frozen pie crusts for about 4 hours in the fridge or 2 hours at room temperature.
Spread a thin layer of butter on pie dish.
Place thawed pie crust on the dish and shape the crust so it fits slightly larger than the pie dish.
Make sure to press and remove any air bubbles from in between the pie crust and dish.
Trim the edges of the pie crust that hang over the pie dish with a knife, and then put the pie dish in the
refrigerator for approximately 30 minutes.
Once the crust hardens, trim the edges to fit the pie dish and prick the bottom of the crust with a fork to
keep air bubbles from forming. Then put it back in the refrigerator.
Apple filling. Cut apples into 8 slices, and then dice them. Add lemon juice and
Lakanto® and put into a large pot to simmer at medium heat.
Without stirring, simmer for 20 minutes for the juices to evaporate.
Once all the juice evaporates, place the filling on a pan to cool off.
Spread slightly browned bread crumbs in pie dish, and then the cooled off filling over the
breadcrumbs.
Cut the other pie crust into 1 inch (2 cm) width strips for the lattice topping with the longest strips in
the middle.
Flute the edges of the pie with your fingertips and trim the extra crust.
Mix water and egg yolk, and coat the surface of the pie.
Bake for 10 min on lower rack at 482 °F (250 °C), or 30 min at 356 °F (180 °C)
