
Lakanto Breakfast Cereal
The contest is open to everyone, both customers and non-customers and is an opportunity to learn some new Lakanto recipes and have a chance to win some ***FREE*** Lakanto products.
Here's how it works. Just comment on this blog post below by pasting your recipe into the Comment box, but be sure to include your name and contact info (preferably email), or go to our Facebook page and post
your favorite Spring Lakanto recipe.
Our panel of judges will be looking for healthy recipes that are unique, and that have wide appeal to the largest number of people. At the end of the month we will announce the top three winners on our blog and on our Facebook page.

In order to kick off the recipe contest we're including our favorite Lakanto Blueberry Cornmeal Pancake recipe. Here it is:
Lakanto Blueberry Cornmeal Pancakes

Lakanto Blueberry Cornmeal Pancakes
Ingredients:
" 1 cup soy or oat milk
" ½ cups water
" 1 cup whole-wheat flour
" 1 or 2 scoops of Hemp Protein
" ½ cup ground cornmeal
" 2 tablespoon grounded Lakanto
" 1 teaspoon baking powder
" 1/4 teaspoon salt
" 1 cup frozen blueberries
" 2 teaspoon vegetable oil
1. Pre heat oven to 200 degrees
2. In a small bowl combine the soy or oat milk and water
3. In a large bowl, combine the flour, hemp powder, cornmeal, Lakanto, baking powder, soda and salt. Stir in the liquid ingredients. Fold in the blueberries and let sit for 5 minutes.
4. Lightly oil a skillet or griddle and heat over medium heat. Pour about ¼ cup of batter into the hot griddle and cook until pancakes are bubbly on top, flip over and cook on the other side.
5. Transfer to a baking sheet and keep in the oven while cooking the remaining batter. Serve warm with yogurt and fresh fruits. Sprinkle with Lakanto (optional)

In the meantime, why not make your own? Try this brand-new recipe for Sugar-free Raw Chocolate-dipped Strawberries.
Raw Chocolate Dipped Strawberries
1/2 Cup cacao butter
2/3 Cup cacao powder (or 1/2 Cup cacao paste)
1/2 teaspoon virgin coconut oil
1/2 tablespoon ground vanilla bean or pure vanilla extract
4 tablespoon ground LAKANTO®
Pinch of salt
Approximately 20 fresh strawberries
Method
1. Grind LAKANTO® in a spice grinder until very fine
2. To melt the cacao, put a bowl into a small pot of water on the stovetop. Use just enough heat to melt the cacao without cooking it.
3. Melt the cacao butter, add cacao powder and coconut oil and mix till smooth. Alternatively, you can use cacao paste (also called cacao liquor) in place of the butter and powder.
4. Stir in the LAKANTO®, add vanilla and a pinch of salt. Mix well.
5. Once everything is thoroughly mixed, dip and roll the strawberries in the chocolate sauce, then place them onto parchment paper.
6. 1/2 cup of melted cacao will cover about 20 strawberries.
7. Refrigerate the dipped strawberries for 15 minutes to harden the chocolate.

Here is a wonderfully delicious Lakanto summer time treat. Use the blueberries (my favorite), raspberries, and other fruits in season in your area along with bananas, kiwi, mango or other exotic fruits that you like. You can sweeten your fruits with Lakanto or just stick with the local seasonal fruits as they are. You can't go wrong with this recipe.
Here is one version of the recipe, but feel free to play with it by adding a little more Lakanto or fruits along with the Chocolate Mousse from our last post. Please let us know how you like it by putting your comments below. Enjoy!
Lakanto Fruit Tart with Chocolate filling
Crust
3/4 cup almond flour (ground up almonds, or left over fiber from almond milk)
1/3 cup coconut flakes
1/3 cup Lakanto
2 tablespoons coconut oil
1/2 teaspoon salt
Optional: 1 tablespoon of lucuma powder
Topping
1/2 cup Chocolate Mousse
1 sliced kiwi
1/2 cup of mixed berries or other seasonal fruits
Method
1. In a bowl, combine all dry ingredients and mix with a wooden spoon
2. Add coconut oil and mix well until it resembles crumbly dough. The mixture should be able to hold form when squeezed together
3. Transfer into a pie/tart dish with removable base. Press firmly into the form and up the edges to form the crust
4. Place into freezer for 15 minutes to firm up
5. Make the Chocolate Mousse [link to recipe]
6. Take the tart out of the freezer and fill with mousse
7. Place the sliced kiwi, banana and berries on top of the mousse
8. Keep in the refrigerator until serving. Before serving press on the base of form to remove the tart

Chocolate Mousse
1 avocado
1/4 cup water or almond milk
3 tablespoons cacao powder
1 tablespoon mesquite powder
1 tablespoon of ground Lakanto (use a spice grinder or blender)
1/4 teaspoon vanilla bean powder or 1/2 teaspoon alcohol free vanilla
Pinch of salt
Method
1. Scoop avocado into a food processor
2. Add water or almond milk and process with S-blade until smooth
3. Add all dry ingredients, stopping processor occasionally to scrape the sides
4. Process until smooth, taste testing often
5. Add more Lakanto if needed
6. Chill before serving
Note: the recipe might need more liquid depending on avocado

We would like to introduce you to Katrine Volynsky, who is a
Certified Sports Nutritionist, Wellness Coach and a Raw Food Chef and
Instructor based in Vancouver, Canada. She is going to do a series of
healthy recipes using Lakanto that you can share with your friends
and family. Katrine has been using Lakanto for several years and has
a lot of experience preparing delicious foods with this unique zero
calorie sweetener.
Katrine will start the series by demonstrating how to make a
completely nutritious hot chocolate that is easy and quick to make,
tastes good, and most importantly is healthy for you. Please tell us
how you like the recipe in the comment field below.
Hot Chocolate
1 cup almond or hemp milk
2 tablespoons cacao paste
2 tablespoons cacao powder
1 tablespoon Lakanto
1 teaspoon mesquite powder
1/2 teaspoon vanilla powder or alcohol free vanilla extract
Pinch of salt
Method
1. Heat up almond milk in saucepan
2. Add cacao paste and stir until melted
3. Stir in the rest of the dry ingredients
4. Adjust the thickness by adding more cacao paste and/or add more
Lakanto to taste
5. Serve hot
Optional: Add spices such as hot chilies and cinnamon for Mexican
flavor or add peppermint oil for holiday flavor
Optional: If you own a CocoMotion machine, add all ingredients and
let the machine do the blending
Optional: For raw version, add cold or slightly warmed almond milk
into high-powered blender and add the rest of the ingredients. Blend
on high for 5 minutes until nice and warm but not hot.

Supporting the Japanese Relief Effort
We want to thank our many customers who have called and written expressing concern about the situation in Japan. Some of you have also expressed concern about the quality and availability of Lakanto. We have been kept informed by our Japanese partners who have been on the front lines of the relief effort from the very first day. Here is the story from the very best sources of information available.
The original dangers from the earthquake and the tsunami have subsided but the number of dead and missing continues to rise. The nuclear power plants at Fukushima are still a growing concern, but the Japanese resolve to bring the situation under control will ultimately win out.
We are confident that, in all of these horrific circumstances, the deep reserves of fortitude and resilience which the Japanese people are known for will hold them in good stead.
The Saraya Co., Ltd. is using its immense resources in the area of healthcare, hygiene, food, and environmental sanitation to bring immediate relief to the homeless and displaced victims of the tragedy.
Saraya unharmed by earthquake and tsunami
Saraya Co., Ltd.'s headquarters and Lakanto manufacturing facility is located in Osaka, some 600 km from the area that was hit the hardest. This distance means the Lakanto manufacturing plant was unharmed and will continue to produce the highest quality products and will supply our distributors around the world without interruption.

"Gasoline and electricity are being rationed in Kanto (Tokyo area)
and Tohoku (the area of the earthquake) and people are encouraged to
buy water, dry foods, batteries and other necessities when possible.
However there is a shortage in many of these commodities, so people
in areas such as Kansai (Osaka) are helping to provide goods to those
in need. Saraya is helping with soap and alcohol hand disinfectant.
Everybody around the world and in Japan are pulling together to help
those in need, and the local rebuilding process is gradually making
progress. First roads are being cleaned and repaired to allow
cleaning and repairing of homes, industrial sites, and business
centers damaged by the earthquake. Unfortunately, this is a massive
project and millions of people have been affected, with tremendous
lose of irreplaceable belongings.
The earthquake has affected businesses in many ways. Besides the
obvious damage to businesses in eastern and northern Japan, companies
that produce raw materials affected by the quake can no longer keep
up with orders, leaving many companies scrambling for resources
outside of Japan.
Regarding the nuclear plant in Fukushima, this is the most worrisome
subject now, especially for those outside of Japan who have been led
to believe in the worst situation, that nuclear fallout will cause
radiation to spread around the world. Fortunately, the reality is
that even in the worst scenario, only a small area around the
Fukushima nuclear plants would be directly affected. It is a pity
when private companies such as the owners of the Fukushima plant or
BP Oil make oversights on the safety of their facilities.
However, it is said that the Japanese government has been great at
responding to the earthquake and tsunami, and the early warning
system helped save thousands of lives.
The Japanese Self Defense Force and the national police have
deployed 100,000 service men and women to aid in rescue and
reconstruction. However, I must sadly report that the number dead
exceed 10,000 people, with over 17,000 listed as missing.
The people who suffered and lost their homes due to the tsunami as
well as those who were evacuated from around the nuclear plants are
more than 450,000 families.
Our prayers are with everyone affected and helping with the rescue."
