Easy Rice Pudding

Ingredients (5 servings)

  • 1 3/4cup (400g) coconut milk
  • 3/4cup and 2 tablespoons (200g) milk
  • 1/2cup (100g) rice
  • 2 1/2 teaspoons (12g) gelatin
  • 3 1/2 tablespoons (50g) Lakanto®
  • 1/2cup (150g) Blueberry Fiber Jam

Instructions

  1. Wash rice.
  2. Add milk and Lakanto® to rice and simmer over low heat for 15 to 20 minutes until moisture has evaporated.
  3. Add coconut milk to mix described in Instruction 2, and put into a blender.
  4. After blending, pour back mixture into a pot and bring to a boil.
  5. Add liquefied gelatin in a pot and mix well.
  6. Put into molds to cool.
  7. Remove pudding from molds and top with Blueberry Fiber Jam.

Cooking tips

  • Make sure to simmer rice long enough or else it will taste like regular rice.
  • Adjust amount of Lakanto® and Blueberry Fiber Jam according to your taste preferences.
  • Bread can replace rice.
  • It is important to completely mash the grains of rice or else it will not taste as good. 
  • Milk and eggs can be used to replace coconut milk.
