Ingredients (20cm diameter)
2 sweet potatoes
5 teaspoons Lakanto®
1 egg
1 1/3 tablespoons of fresh cream
a pinch of cinnamon
1/2 ounce (16g) blue cheese
Instructions
Wrap sweet potato in foil and bake for approximately 40 minutes at 390F (200°C).
Check with a skewer if baked, then cut sweet potatoes vertically and use a spoon to remove the potato flesh
without damaging the skin.
While hot, add Lakanto® to the potato flesh and mash. Mix in 2/3 of an egg, fresh cream and
cinnamon
Put blue cheese in the boat shaped potato skins and fill the rest with the potato mix.
Mix a little bit of water and the remaining egg, and coat the surface. Place on a baking sheet and bake for
approximately 10 to 15 minutes at 390F (200°C).
Cooking tips
For those who dislike blue cheese, replace it with processed cheese, cream cheese, Camembert, or your
cheese of choice.
