Ingredients (18cm diameter)

  • 6 tablespoons (90g) cream cheese
  • 1 block of soft tofu
  • 6 tablespoons of lemon juice
  • 1/2 tablespoon (8g) powdered gelatin
  • 3 tablespoons (39g) Lakanto  
  • 3 1/2 tablespoons (50g) unsalted butter
  • 14 cookies

Instructions

  1. Remove the excess moisture from the tofu by wrapping it in a clean dish cloth for half a day. Then soak gelatin in water.
  2. Crush cookies in a bag, mix with melted butter, and form the crust.
  3. Put cream cheese, tofu, lemon juice, Lakanto®, and gelatin (dissolved in hot water) in a bowl and mix well.
  4. Pour mix over crust and refrigerate.
