Vegan Chocolate Chip Oatmeal Cookies

Ingredients (8 servings)

  • 1 cup shortening  (I used vegan) (if you use butter instead, the cookies will spread)
  • ¾ cup Lakanto® granules or ½ cup grinded Lakanto
  • 1tsp vanilla
  • 1 ½ cup all purpose flour (I used organic whole wheat flower)
  • 2 cups rolled oats (organic)
  • 1tsp baking soda
  • ½ tsp salt
  • ¼ cup boiling water
  • ½ cup nuts (optional) (I used almonds) (you can use flax, pumpkin, sunflower, etc)
  • 6 oz semi-sweet chocolate chips (organic) (For healthier version, eliminate chocolate chips)

Instructions

  • Beat shortening, sugar, vanilla until light and fluffy.
  • Add flour & salt; mix well.
  • Dissolve baking soda in boiling water. Add to the mixture. Stir in remaining ingredients.
  • Cool down for 15 min in a refrigerator. Scoop the dough, form cookies to a desired size and shape.
  • Bake in a middle rack for 10-15 min. (I baked for 15 min).
  • Remove from the oven and cool cookies down until hardened.

Cooking tips

  • Grind Lakanto® in a coffee grinder into a fine powder for easier and more economical use.
