Vegan Chocolate Chip Oatmeal Cookies

Ingredients (8 servings)
1 cup shortening (I used vegan) (if you use butter instead, the cookies will spread)
¾ cup Lakanto® granules or ½ cup grinded Lakanto
1tsp vanilla
1 ½ cup all purpose flour (I used organic whole wheat flower)
2 cups rolled oats (organic)
1tsp baking soda
½ tsp salt
¼ cup boiling water
½ cup nuts (optional) (I used almonds) (you can use flax, pumpkin, sunflower, etc)
6 oz semi-sweet chocolate chips (organic) (For healthier version, eliminate chocolate chips)
Instructions
Beat shortening, sugar, vanilla until light and fluffy.
Add flour & salt; mix well.
Dissolve baking soda in boiling water. Add to the mixture. Stir in remaining ingredients.
Cool down for 15 min in a refrigerator. Scoop the dough, form cookies to a desired size and shape.
Bake in a middle rack for 10-15 min. (I baked for 15 min).
Remove from the oven and cool cookies down until hardened.
Cooking tips
Grind Lakanto® in a coffee grinder into a fine powder for easier and more economical use.
